Course of Pastry Maker

This specialised course is designed to provide students with a broad range of pastry skills and knowledge.

Students will develop a range of preparation and presentation skills synonymous with the fine tuned skills required of a fully qualified pastry chef. During the Certificate Course (level one), the students will be learning the fundamentals and basic techniques of pastry; but applying for the Diploma Course means to acquire the necessary skills and professional techniques to be qualified as pastry chefs in the pâtisserie industry.

The course of pastry is structured to give students an understanding of Italian culture and food knowledge to provide solid foundations of ingredients and technical skills that are necessary to become professionals in the pastry field. The program offers a complete overview of typical Italian products and their use in the Italian pastry field as well as a complete knowledge of the cultural background that has developed Italian pastry and baking into the art that it is today. The simplicity of Italian pastry is truly unique and cannot be paralleled by cuisines of other cultures festivities sweets, Italian life is dominated by local specialties that mark each local tradition. The aim of the program is to educate students through a technical approach to their future careers and to understand the development of contemporary pastry arts.

If you wish to enroll in a direct entry (Second Year) for our Diploma program you must also qualify to be able to enter in the level by:

  • Submitting a detailed curriculum vitae specifying any professional experience in the field of desired Diploma program (a minimum of 6 months experience is necessary) and academic transcripts
  • Submitting educational transcripts
  • Passing an entry examination upon arrival in Naples

Or sending an official undergraduate transcript reflecting courses in the field of the desired Certificate along with the grades you received in those courses.

VISH Pastry-Making Intensive Program of 90 hours allows students to develop the fundamental skills in baking and pastry making. To earn a VISH Certificate of Attendance in Pastry Making means to gain the opportunity to learn the theory and techniques from professional bakers and pastry chefs. The student will be acquiring advanced knowledge in bakery, pastry and some aspects of the culinary arts like using the various kitchen equipment, the essentials of kitchen management, trends and terminology, safety regulations, weights and measures, laminated dough and the art of creating custards, icings, meringue and other components related to Pastry.
